I got an urge to have fried chicken. About a week ago we were watching TV and I saw a recipe that used French’s Onions as part of the coating for fried chicken. When we saw it Fearghus said he’d be interested in trying it. A quick grep of teh Intarwebs found this recipe. I’ve slightly tweaked it for my uses.
The result is Fearghus says I can “make this anytime”. I’m happy to oblige.
I want to tweak it further to see if I could remove the French’s.. I really don’t tend to have that on hand.. and I think this would make a nice breading for almost any meat you wanted to bake. It has very good flavor and is not terribly spicy.
Last night I served this with Mac&Cheese from the CleanEating website. The Mac&Cheese was ok.. but needs a bit of tweaking before I’ll add it to a permanant menu list.
Spicy Oven Fried Chicken
2 cup buttermilk
3 boneless skinless chicken breasts1 cup FRENCH’S® French Fried Onions
1 tsp cumin
1 tsp paprika
1 tsp chili powder
1 tsp garlic salt
1 tsp pepper
1 cup flourPreheat oven to 400F.
Cut chicken breasts into 4 pieces (I cut them lengthwise and then crosswise). Soak chicken in buttermilk for at least 10 minutes.
Grease or spray a 9×12 baking pan.
Combine remaining ingredients in a bowl or baggie. Remove chicken from buttermilk and coat with dry mixture. Lay pieces in the baking pan so they are not touching.
Bake for 40-50 minutes.
