Hungry Woman’s Quiche

aka: Real Men Eat Quiche

Made quiche tonight. I followed the original mostly but added some swiss chard I had on hand (it needed to be used up). I found that I had to cook the quiche about 20 mintues longer than the original specified.. and that even then the potato seemed a bit underdone. I’ve update the recipe below. Next time I’ll microwave the potatoes for 5 minutes before slicing them and check the quiche to see how long it really takes for it to get all set up.

1 unbaked pie shell
3 small potatoes (microwave for 5 minutes then sliced)
1/4 cup cubed cooked ham
2 handfulls shreded swiss chard
1 cups shredded cheese
5 large eggs
1 cup milk

Preheat the oven to 325 degrees F. Prick the bottom of the pie shell with a fork in several places (dot the pie shell) and prebake for 15 minutes; remove from the oven, then icrease the oven temperature to 375. Layer the potatoes, ham, chard and then cheese into the shell. Beat the eggs and milk together, and pour the mixture into the shell. Bake for 30 minutes at 375. Reduce heat to 350 and bake for an additional 10-30 minutes until it’s set in the middle.
