\"\"<\/a>Cauliflower isn’t exactly the most exciting vegetable. I mean it’s white.. and it tastes.. well kinda white and vegetable-y. I don’t mind cauliflower… but normally it’s a “have-to” as in “I have to eat my cauliflower”. I’ve never anticipated or craved cauliflower. This recipe might just change my mind.<\/p>\n

The sweet of the balsamic plays nicely with the salty of the cheese. Add to that, roasting the cauliflower gave it a nice almost nutty taste. So for me.. it’s a win.<\/p>\n

Fearghus says it still tastes like cauliflower (which he doesn’t like)… so I guess that just means more for me.<\/p>\n

Balsamic & Parmesan Roasted Cauliflower<\/h2>\n

Ingredients<\/b>
\n1 head cauliflower cut into florets
\n2 Tbsp light olive oil
\n1\/4 tsp Salt
\nFresh ground pepper to taste<\/p>\n

2 Tbsp balsamic vinegar (white if available)
\n1\/2 cup finely shredded Parmesan cheese<\/p>\n

Preparation<\/b>
\nPreheat oven to 450F.
\nToss cauliflower, oil, salt, pepper in a large bowl. Spread out on a large rimmed baking sheet and roast until starting to soften and brown on the bottom, 20-25 mins.
\nToss cauliflower with vinegar and cheese. Return to the oven and roast until the cheese is melted and any moisture has evaporated, 5-10 mins more.\n<\/p><\/blockquote>\n","protected":false},"excerpt":{"rendered":"
