It tells me what produce is in season.. and offers me a recipe to use with that product.  October is Chard.  The recipe is for a Chard Frittata.  I don&#8217;t have chard.. but I do have spinach.  Luckily Frittatas are very easy to modify.  The original called for butter, mushrooms and chard.  I decided to use bacon, onion and spinach.  The bacon fat was just perfect for cooking up the onions.  <\/p>\n<p>A Frittata is eggs + veggies + (optional) meat + (optional) potato.  It&#8217;s a good fridge clean out meal.  It&#8217;s also very fast.  I think altogether I spent about 30 minutes making this meal.<\/p>\n<blockquote>\n<h1>Spinach, Onion and Bacon Frittata<\/h1>\n<p>6 eggs, beaten<br \/>\n1 ounce Parmesan, grated<br \/>\n1\/2 teaspoon black pepper<br \/>\nPinch salt<br \/>\n4 slices Bacon, chopped small<br \/>\n1 Onion, diced<br \/>\n2 cups spinach, chopped<br \/>\n1 Tbsp chopped fresh parsley<\/p>\n<p>Preheat oven to broil setting.<\/p>\n<p>In a medium siz bowl, using a fork, blend together eggs, cheese, pepper and salt. Set aside.<\/p>\n<p>In oven safe pan, over medium-high heat, brown bacon until crisp.<br \/>\nAdd onion. Cook until onion is brown.<br \/>\nAdd spinach. Cook until spinach is wilted.<br \/>\nDrizzle egg mixture over bacon mixture.  Fill in around bacon and veggies.<br \/>\nCook without stirring until bottom is firm and middle has just started to set, 4 to 5 minutes (alternatively you can just bake it at 350F for 30-40 mins).<br \/>\nMove to oven and broil until top browns slightly. Watch closely so you don&#8217;t burn it. .  It&#8217;s done when you cut into it and you don&#8217;t see any liquid.<\/p>\n<p>Remove from oven.  Cut into 4 servings.
