Balsamic & Parmesan Roasted Cauliflower

Cauliflower isn’t exactly the most exciting vegetable. I mean it’s white.. and it tastes.. well kinda white and vegetable-y. I don’t mind cauliflower… but normally it’s a “have-to” as in “I have to eat my cauliflower”. I’ve never anticipated or craved cauliflower. This recipe might just change my mind.

The sweet of the balsamic plays nicely with the salty of the cheese. Add to that, roasting the cauliflower gave it a nice almost nutty taste. So for me.. it’s a win.

Fearghus says it still tastes like cauliflower (which he doesn’t like)… so I guess that just means more for me.

Balsamic & Parmesan Roasted Cauliflower

Ingredients
1 head cauliflower cut into florets
2 Tbsp light olive oil
1/4 tsp Salt
Fresh ground pepper to taste

2 Tbsp balsamic vinegar (white if available)
1/2 cup finely shredded Parmesan cheese

Preparation
Preheat oven to 450F.
Toss cauliflower, oil, salt, pepper in a large bowl. Spread out on a large rimmed baking sheet and roast until starting to soften and brown on the bottom, 20-25 mins.
Toss cauliflower with vinegar and cheese. Return to the oven and roast until the cheese is melted and any moisture has evaporated, 5-10 mins more.
