Spinach, Onion and Bacon Frittata

Frittata leftovers for lunch the next day
My wall calendar is a garden calendar. It tells me what produce is in season.. and offers me a recipe to use with that product. October is Chard. The recipe is for a Chard Frittata. I don’t have chard.. but I do have spinach. Luckily Frittatas are very easy to modify. The original called for butter, mushrooms and chard. I decided to use bacon, onion and spinach. The bacon fat was just perfect for cooking up the onions.

A Frittata is eggs + veggies + (optional) meat + (optional) potato. It’s a good fridge clean out meal. It’s also very fast. I think altogether I spent about 30 minutes making this meal.

Spinach, Onion and Bacon Frittata

6 eggs, beaten
1 ounce Parmesan, grated
1/2 teaspoon black pepper
Pinch salt
4 slices Bacon, chopped small
1 Onion, diced
2 cups spinach, chopped
1 Tbsp chopped fresh parsley

Preheat oven to broil setting.

In a medium siz bowl, using a fork, blend together eggs, cheese, pepper and salt. Set aside.

In oven safe pan, over medium-high heat, brown bacon until crisp.
Add onion. Cook until onion is brown.
Add spinach. Cook until spinach is wilted.
Drizzle egg mixture over bacon mixture. Fill in around bacon and veggies.
Cook without stirring until bottom is firm and middle has just started to set, 4 to 5 minutes (alternatively you can just bake it at 350F for 30-40 mins).
Move to oven and broil until top browns slightly. Watch closely so you don’t burn it. . It’s done when you cut into it and you don’t see any liquid.

Remove from oven. Cut into 4 servings. Serve immediately.
